1st you want to marinade the chicken. Add ingredients to a bowl and combine thoroughly with your hands, ensuring the chicken Is coated. Cover, and set aside in the fridge for 30 minutes while you prep the rest of the components (or longer if you can afford the time).
Prep your rice, as per packet instructions, drain and rinse your chickpeas and then combine with olive oil, a pinch of salt and sumac.
Chop your salad ingredients, ready to assemble.
In a frying pan, add some olive oil, and fry on medium/high heat for 4-5 minutes either side (or until cooked through).
Fry the halloumi for 2-3 minutes either side or until golden brown.
In a separate bowl, combine the garlic yoghurt ingredients together.
Time to assemble! You can do this any way you please 🙏🏽 I did the yoghurt first, topped with the rice & chickpeas followed by chopped veg, chicken, halloumi & some spring onion/herbs to serve!
