Mediterranean Chicken Bowl with Garlic Yoghurt

Ingredients

  • 4 chicken thighs
  • 1-2 tbsp greek garlic seasoning
  • 2-3 cloves garlic
  • 1 tbsp olive oil
  • juice of 1 lemon
  • pinch of salt

For the salad:

  • 1/2 cup cherry tomatoes, quartered
  • 1/2 Lebanese cucumber, diced
  • 1/4 red onion
  • 1/2 red capsicum
  • 1/2 cup brown basmati rice (you can use your preferred rice)
  • 1/2 cup chickpeas
  • 1/2 block halloumi (90g)
  • 1/2 cup kalamata/green olives
  • olive oil / sumac / salt

For the garlic yoghurt:

  • 2 tbsp greek yoghurt
  • 2 tbsp hummus
  • 1 clove garlic

Instructions

  • 1st you want to marinade the chicken. Add ingredients to a bowl and combine thoroughly with your hands, ensuring the chicken Is coated. Cover, and set aside in the fridge for 30 minutes while you prep the rest of the  components (or longer if you can afford the time).
  • Prep your rice, as per packet instructions, drain and rinse your chickpeas and then combine with olive oil, a pinch of salt and sumac.
  • Chop your salad ingredients, ready to assemble.
  • In a frying pan, add some olive oil, and fry on medium/high heat for 4-5 minutes either side (or until cooked through).
  • Fry the halloumi for 2-3 minutes either side or until golden brown.
  • In a separate bowl, combine the garlic yoghurt ingredients together.
  • Time to assemble! You can do this any way you please 🙏🏽 I did the yoghurt first, topped with the rice & chickpeas followed by chopped veg, chicken, halloumi & some spring onion/herbs to serve!
