Ingredients
Beef tacos
400gSirloin steak
4Soft tacos
1/2Avocado
1/8Red cabbage
Pickled onions
1/2Red onion
2TbspRed wine vinegar
1tspSalt
tspSumac
Mango Salsa
1Mango, diced
1Tomato, diced
1/2Red onion, diced
1HandfulCoriander, diced
1Lime, juiced
PinchSalt
Probiotic Coriander Dressing
1cupPlain Kefir
1bunchCoriander
3Pickled chillis
3clovesgarlic
1lime, juiced
Pinch Salt
DrizzleOlive oil
Instructions
1. For the mango salsa, combine all ingredients in a bowl and mixtogether. 2. Heat a pan over high heat. Season and oil the steaks. Add thesteak to the pan once hot and cook for 2 minutes either side (medium rare).Once done, remove from pan and allow to rest for 4-5 minutes. 3. Add the pickled onion ingredients to a bowl and set aside. 4. For the coriander dressing, add all ingredients to a blender and blend until a bright green colour is achieved and it is smooth and runny. 5. Thinly slice the beef, and Now it is time to assemble. Add the cabbage, mango salsa, avocado, beef, pickled onions and the coriander yoghurt and enjoy!
