Ingredients

Beef tacos

  • 400 g Sirloin steak
  • 4 Soft tacos
  • 1/2 Avocado
  • 1/8 Red cabbage

Pickled onions

  • 1/2 Red onion
  • 2 Tbsp Red wine vinegar
  • 1 tsp Salt
  • tsp Sumac

Mango Salsa

  • 1 Mango, diced
  • 1 Tomato, diced
  • 1/2 Red onion, diced
  • 1 Handful Coriander, diced
  • 1 Lime, juiced
  • Pinch Salt

Probiotic Coriander Dressing

  • 1 cup Plain Kefir
  • 1 bunch Coriander
  • 3 Pickled chillis
  • 3 cloves garlic
  • 1 lime, juiced
  • Pinch Salt
  • Drizzle Olive oil

Instructions

  • 1.    For the mango salsa, combine all ingredients in a bowl and mixtogether.
    2.    Heat a pan over high heat. Season and oil the steaks. Add thesteak to the pan once hot and cook for 2 minutes either side (medium rare).Once done, remove from pan and allow to rest for 4-5 minutes.
    3.    Add the pickled onion ingredients to a bowl and set aside.
    4.    For the coriander dressing, add all ingredients to a blender and blend until a bright green colour is achieved and it is smooth and runny.
    5.    Thinly slice the beef, and Now it is time to assemble. Add the cabbage, mango salsa, avocado, beef, pickled onions and the coriander yoghurt and enjoy!
