Mediterranean Chicken bowl with garlic yoghurt

Ingredients

For the chicken

  • 5-6 Chicken thighs
  • 1 tsp olive oil
  • 1 tbsp smoked paprika
  • 1 tbsp onion powder
  • 1 tbsp oregano
  • 1 tsp cumin
  • 1 lemon, juiced
  • salt & pepper

For the salad

  • 200 g cherry or grape tomatos
  • 1/2 red onion, sliced
  • 1 cucumber, sliced
  • 5-10 sicilian olives, sliced
  • 1 handful dill, chopped
  • 1/2 lemon, juiced
  • drizzle olive oil
  • pinch sumac
  • pinch salt
  • 1/2 cup brown rice
  • 90 g haloumi

Yoghurt dressing

  • 2 tbsp dill
  • 1/2 cup greek yoghurt
  • 1 tbsp kewpie mayonnaise
  • 1 tbsp capers, diced
  • 1/2 lemon, juiced
  • pinch salt

Instructions

  • Cook rice as per packet instructions
  • Add 5-6 chicken thighs to a bowl. Drizzle with olive oil & season with spices listed above, yogurt, lemon juice and combine thoroughly. Set aside (the longer the better, but not 100% important).
  • When you're ready to eat, bring a pan to medium heat, add 1 tbsp oil, add the chicken (brought up to room temp before cooking),and cook it through on medium heat for around 4 minutes each side or until cooked through.
  • To a bowl add the salad ingredients, and mix well,then let it sit while you prep the rest.
  • Make the white sauce by mixing all ingredients in ajar and shaking.
  • Assemble! start with the yoghurt first and then layer your ingredients on top.
