Cook rice as per packet instructions
Add 5-6 chicken thighs to a bowl. Drizzle with olive oil & season with spices listed above, yogurt, lemon juice and combine thoroughly. Set aside (the longer the better, but not 100% important).
When you're ready to eat, bring a pan to medium heat, add 1 tbsp oil, add the chicken (brought up to room temp before cooking),and cook it through on medium heat for around 4 minutes each side or until cooked through.
To a bowl add the salad ingredients, and mix well,then let it sit while you prep the rest.
Make the white sauce by mixing all ingredients in ajar and shaking.
Assemble! start with the yoghurt first and then layer your ingredients on top.
